Stuffed Bell Peppers

3 tsp olive oil

2 cloves garlic

3/4 c. onion

3/4 c. carrots

1 1/2 c. tomato sauce

3 bell peppers

13.5 oz ground turkey cooked and seasoned (cumin, pepper, paprika, chili powder)


Saute chopped garlic, onion and carrots in olive oil. Add cooked turkey and tomato sauce.

Divide and stuff mixture in bell peppers, cover & bake at 375 x 30 minutes.

3 blocks each. asy & each pepper makes a 3 block meal.

2lbs Frozen Chicken Breasts

17.5 oz San Marcos Green Mexican Salsa 1/2-3/4 jar

1/2 white onion sliced thin

couple dashes dried garlic

black pepper

cumin to taste

water to cover

Put in a crockpot on high heat for 3 hours.  I put the chicken in frozen.

Shred chicken, put back in crockpot with sauce and turn crockpot to low.  Let cook for another hour or so.  The chicken will absorb some of the liquid.

I served with fresh limes, lettuce, tomotoes, avocado, cheese, & corn tortillas.  I ate mine like salad no tortilla, no cheese, super yummy!  So easy!
