16 oz Walnuts
1 C honey
1 T vanilla extract
1/2 C extra dark baking cocoa 100% cacao
1/2 t coarse sea salt
1 t baking soda
2 oz unsweetened dard chocolate chopped
1 – 2 T coconut oil
Preheat oven to 325. Grease an 8×8 baking pan with coconut oil.
Pulse walnuts in food processor until creamy and smooth. In large bowl beat the egg and add the honey and vanilla. Mix well. In a small bowl combine the cocoa, salt and baking soda. Slowly add the cocoa mixture in thirds to the batter mixing well with each addition. Add chopped chocolate. Pour into greased pan and bake 30 – 35 minutes. It will puff up in the oven and settle when it cools. To test doneness, insert toothpick or knife in the middle. It should come out clean or just barely wet.
